Kyoto Knife Sharpening Class

Kyoto's knife sharpening classes side by side: one-hour workshops in Arashiyama and with HIRAI, a whetstone class, a 2-hour class on Sanjo and the whetstone museum's own lesson.

Updated November 2026

A knife sharpening class in Kyoto takes an hour, sometimes two, and the right one depends on what you want to carry out of the door: a skill, a handle you fitted, or your name on a knife. The class on this page is Viyago Japan’s Kyoto: Craft or Sharpen Your Own Japanese Kitchen Knife in Arashiyama, an hour with an instructor in English or Japanese. Its Beginner plan sharpens a Japanese kitchen knife with the handle already attached; its Custom plan adds a choice of blade type, fitting the provided handle and finishing. Either way the knife goes home with you. It was per person from $19 on promotion, usually $38, checked November 2026, with 86 reviews and free cancellation up to 24 hours before; which plan that price buys is not stated.

Powerd by GetYourGuide

The calendar above is the Arashiyama workshop. Arrive at least 15 minutes before your start time: guests more than 5 minutes late cannot take part, and a burger cafe at the same venue is the place to wait. Children under 6 cannot join, and getting to the workshop is up to you. Initial stamping is a paid add-on, in the Custom plan only, and the handle type cannot be chosen.

The same workshop is sold on Viator by Viyago, where the Beginner sharpening plan and the Custom knife are separate options. Which plan the lowest GetYourGuide price buys is not stated, and it is a date-specific discounted price; read the option before you book.

What a class gives you, and what it does not

Every class here ends with a sharper knife and a better idea of how to keep it that way: the angle, the pressure, the stroke. None of them forges a blade. If that is the part you want, the forging workshop in Sakyo Ward is the one that starts from raw iron, and Kyoto knife making class sets it beside these.

Bring the knife you cook with only where the class welcomes it: the museum’s workshop does, while the Arashiyama, HIRAI and Pontocho workshops supply the knife you work on. At HIRAI you choose a santoku, deba or yanagi, and buying an extra knife in the shop is not in the price.

The museum’s own lesson

The Natural Whetstone Museum in Kameoka runs the only sharpening lesson in this list that is not sold on GetYourGuide or Viator: JPY 3,000 per person for 60 to 90 minutes, your own knife welcome, booked on the museum’s site, with English assistance at JPY 2,000 for one person or JPY 1,000 each for two or more (fees revised on 22 October 2026). It is a day out rather than an hour: Kameoka is about 30 km by road from Kyoto Station, and the museum opens only Thursday to Sunday. The whetstone museum guide has the train and the bus times.
