Kyoto, Sakai or Tokyo for Knife Making?
Where to make or buy a Japanese knife: what Kyoto offers, forging, sharpening classes, Aritsugu and a whetstone museum, against Sakai near Osaka and Tokyo, chosen by itinerary.
Choose the city by your itinerary first and by the kind of workshop second. Kyoto puts four things in one city: a workshop where you forge a knife from raw iron, one-hour sharpening and handle-fitting classes, Aritsugu’s shop on the Nishiki Market street and, out in Kameoka, a museum of natural whetstones. Sakai, south of central Osaka, is the choice when Osaka is your base; Tokyo, when your nights are there. All three have workshops and knife shops, so the best one is usually the city you are already sleeping in.
What Kyoto gives you
| In Kyoto | What it is | Where |
|---|---|---|
| Forging | Authentic knife making experience at a blacksmith in Kyoto (Kendo Experience): 3 hours from raw iron to a polished knife of about 13 to 15 cm | Sakyo Ward, about 12 km by road from Kyoto Station |
| Sharpening and handle fitting | Kyoto: Beginner Knife Sharpening & Handle Fitting Workshop (Japanese knife shop HIRAI), 1 to 2 hours, limited to 3 | Kyoto |
| A one-hour sharpening plan | Kyoto: Craft or Sharpen Your Own Japanese Kitchen Knife (Viyago Japan) | Arashiyama |
| A knife shop | Aritsugu: 10:00 to 17:00, closed on Wednesdays | The Nishiki Market street |
| Whetstones | The Natural Whetstone Museum: free entry, Thursday to Sunday, a JPY 3,000 sharpening workshop | Kameoka, about 30 km by road |
Workshop details checked November 2026; the shop’s and the museum’s hours and fees from their own sites, checked November 2026.
The thing Kyoto has that a sharpening class cannot give you is the forge. In the Kyoto knife workshops on this site, only one starts from raw iron: three hours, a furnace, a hammer and a knife you shaped yourself, taken home in a box.

When Sakai makes more sense
Sakai lies south of central Osaka, and if Osaka is where you are staying, its knife workshops and shops are closer than a day trip to Kyoto. sakaiknifeworkshop.com covers Sakai, the knife-making town near Osaka, in depth: its workshops and where to buy knives there. If you are in Kansai for several days, the two cities do not exclude each other: Kyoto for the forge, Sakai for the shops, or the other way round.
When Tokyo makes more sense
If your trip is Tokyo only, or Tokyo is where you end it, a workshop there saves a day of travel, and Asakusa has knife-making workshops of its own. knifemakingtokyo.com covers knife making in Tokyo in depth. A Tokyo workshop on your last day also means a shorter trip with the knife to the airport.

Which city, in one table
| Your trip | The best fit |
|---|---|
| Kyoto is on the route and you want to make the knife from iron | Kyoto, the forging workshop in Sakyo Ward |
| Kyoto, and you want a sharpening skill or a fitted handle | Kyoto, a one-hour class |
| Your base is Osaka | Sakai |
| Tokyo only, or Tokyo last | Tokyo |
| You want to buy, not make | The knife shops of whichever city you are in; in Kyoto, Aritsugu at Nishiki Market |
Whichever city you choose, the flight home is the same: the knife goes in the checked bag, never the cabin, as taking a Japanese knife home explains.
If Kyoto is on your route and the forge is the point, Kendo Experience’s workshop was per person from $151 (checked November 2026), with free cancellation up to 24 hours before.
